There's a precise reason behind saying "God bless you" after someone sneezes.
The first one is: In 590 there was an outbreak of the bubonic plague and sneezing was considered a symptom. People thus "blessed you" because you would probably die.
Another one is: It is said that your heart stops when you sneeze, and thus "bless you" is meant to ensure the return of life or to encourage your heart to continue beating
